A number of restaurants offering a variety of local fare can be found in the
region of the castle.
Most Jordanians enjoy sweet things and all towns have several popular
patisseries. Baklawa is a favourite choice and is made with paper thin layers
of filo pastry filled with chopped almond or pistachio nuts and honey. During
Ramadan, a special dessert called Ataif is prepared - these are small,
delicious, deep-fried pancakes, stuffed with nuts or cheese.
Ajloun Castle protected the communication routes between south Jordan and
Syria, and was one of a chain of forts, which lit beacons at night to pass
signals from the Euphrates as far as Cairo.
